We have some basic docs on issue status:

There are some gaps. For instance, ON_QA is not mentioned and there are several CLOSED statuses. I think we should also maybe add a description about how these statuses fit into our release workflow.
I would also probably recommend breaking this out into a separate section/page (with a link in the table) as this topic could potentially grow large over time.
